  10. 225 grams bread flour (1 3/4 cup)
  11. Biscuit/biscuit flour
  12. 60g unsalted butter (4 tablespoons at room temperature)
  13. 100 grams of sugar (1/2 cup)
  14. 1 large egg (50 g beaten)
  15. 200g flour (1 1/2 + 2 tablespoons) for cake (if you don't have flour for cake, mix flour and cornstarch)
  16. 2 g baking powder (1/2 tablespoon)

Instructions for making watermelon molds

  1. Collect all the ingredients
  2. In a large bowl, combine the breadcrumbs, cake flour, sugar and coconut salt.
  3. Add instant dry yeast and beat large eggs in 1 bowl with dry ingredients.
  4. Add milk and water, both at 30 C. Stir until smooth.
  5. Stir until a sticky, loose ball forms. Use flour to remove flour from the sides of the bowl. Transfer flour to a lightly floured work surface.

  14. Bake the cake in a mixture of flour and baking powder. Make balls by mixing them with flour.
  15. Cut cake/cake flour with 1/10
  16. Roll the dough into 10 balls. Cover with a tin. Cover with plastic wrap and refrigerate for 10 minutes.
  17. For the main flour (flour needs to be heated). Remove flour with a spatula and transfer to a floured work surface. Press the flour to release the gas in the flour.
  18. Turn the dough into a ball. Cut the flour into 10 parts. 10 pieces turn into balls. Place the flour on a surface covered with a transparent film. Let the flour sit for 15 minutes.
