- 3 cups water per pack (24 waffle cups)
- 3 minced chicken breasts (already cooked) about 1 1/2 lbs. You can get rid of this frozen
- It usually contains turkey neck meat, which is also cooked during Thanksgiving.
- 2 extra large cans Cento Chicken Stock Low Sodium
- 8 eggs
- 1/2 cup parmesan cheese
- Homemade soft toasted bread
- vegetable oil for frying
- 2 dozen eggs
- 2-3 loaves
- Cottage cheese made in Parma
Instructions for making mom's escarole soup
- Roll the meatballs into small 1-inch meatballs and store them in 2-quart jars.
- Submerge the escarole in water and rinse each leaf to remove sand. Cut 4 wires into small pieces at once.
- Bring water to a boil and boil escarole until soft (about 15 minutes). Do not use this water for soup. Drain the water and put it in the fridge (if the soup is cooked later).
- Boil 24 cups of water and mix in Lipton soup.
- Put the meatballs in the chicken (still frozen), cook and bring to a boil (to cook raw meatballs)
- Pour chicken broth. The mixture is boiled. Beat eggs and Parmesan in a small bowl. When the egg mixture boils, add the soup.
- Cook the soup for 20 minutes, then cover and serve.
- Dip the egg mixture in a little water and fry the bread in butter. Once the oil comes out, put them in a large saucepan, sprinkle with Parmesan cheese and cut into pieces. Then place the pieces in a large bowl to cover them. (It's better to have 2 people for this part because it works faster)
