Ingredients and spices for making cinnamon rolls:
- Day:
- 75 grams of warm milk
- 15 grams of active dry yeast
- 500 gram bread flour/all flour
- 100 grams of sugar
- 30 grams of powdered milk
- 5 large eggs
- 7 grams of salt
- 125 g soft unsalted butter
- Spread flour:
- 4 tablespoons unsalted butter, soft, split
- Fill in:
- 150 g (3/4 cup packaged) brown sugar
- 50 g (1/4 cup) granulated sugar
- 1 tablespoon cinnamon
- 1/8 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Layer:
- 6 ounces cream cheese, soft
- 4 tablespoons unsalted butter, melted
- 4 tablespoons of whole milk
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups powdered sugar, sifted
Instructions for making cinnamon rolls
- For the filling: Combine brown sugar, powdered sugar, cinnamon and salt in a bowl. Add melted butter and vanilla until mixture looks gritty. Sit to one side.
- For flour: Two 9-inch round pans, line with parchment paper and grease with parchment paper.
- Heat the milk to about 110 degrees Fahrenheit. Stir in yeast and 1 tablespoon sugar. Let stand until bubbles appear.
- In a stiff mixing bowl decorated with a flour hook, combine flour, remaining sugar, powdered milk, egg, and yeast mixture. Butter until everything is well mixed. Add salt. Butter until flour is combined. Add butter. Until smooth and elastic (if the flour is stretched it will not crack and become transparent).
- Place flour in a large oiled bowl. Cover with cling film and let rise in a warm place until doubled in size.

- Sprinkle the flour evenly with half of the filling, then press the filling firmly into the flour.
- Roll the flour into a tight roll and pinch the seal.
- Roll the seam and cut it into 8 equal parts.
- Place one sandwich in the center of the prepared pan and the other around the pan.
- Cover the pan loosely with cling film and let it double in size.
- Perform steps 8 through 13 for the second modeling clay.
- Bake the bread in the preheated 350°F oven until the edges are browned for about 20 to 25 minutes. Be sure to remove the adhesive plastic before placing the mold in the oven.
- Let the sandwich cool for 5 minutes. Turn a large plate over a bowl, then turn the plate over and bake. Remove the form and parchment paper. Turn the bread over on a wire rack. Let it cool for 5 minutes before pouring it into the glass.
- For the glaze: Place cream cheese in a large bowl. Beat butter, milk, vanilla and salt until smooth. Stir in sugar until smooth.

- I usually freeze rolls to keep them from being shiny until I'm ready to eat.
