- 125 g bread flour (> 13% protein)
- 25 grams of sugar
- 12 g egg (1/4 large egg) and more brush
- 8 grams of milk
- 2 grams of instant yeast
- Salt 1 gram
- 42 grams of water;
- 12 grams of heavy cream
- 15g unsalted butter, chopped
- A pinch of sesame seeds (optional)
Quick Yeast Hamburger Instructions
- Mix all the ingredients except the butter in a bowl with a dough hook. Note: separate salt and dry yeast. Beat the flour until there are no crumbs.
- Add the butter cubes and beat until smooth, 20-30 minutes. Cover with plastic wrap and let rest for 15 minutes.
- Dust your work surface with all-purpose flour. We weigh the dough and divide it into 3 parts of 80 grams each, after cooking it will be 72 grams. Make a ball from each part.
- Place the balls on a baking sheet lined with baking paper and let rise, covered with a damp cloth, for 45 minutes or until tripled in size. Until then, preheat the oven to 180 degrees Celsius without fan.
- Brush the balls with the remaining beaten egg. Sprinkle sesame seeds on top if using. Bake for 12 minutes or until golden brown.
