This is Betty Crocker's recipe. I modified it a bit for me. My husband was happy with them and is still talking about them two days later. I only had hot sauce, so I diluted it with ranch sauce to add our favorite seasoning. I think you could replace the hot sauce with your favorite wing sauce.
Slow Cooker Chicken Meatballs Ingredients and Spices:
- 2kg ground chicken (I use partially frozen chicken breast and puree in a food processor)
- 1 cup panko breadcrumbs
- 3/4 cup finely chopped celery
- 3/4 cup Frank's Buffalo Wing Sauce
- 1/2 cup finely chopped onion
- 2 eggs
- 3 cloves of garlic finely chopped
- 1 teaspoon of salt
- 1 teaspoon celery salt
- 1/2 teaspoon pepper
- 2 tablespoons vegetable oil
- 1/4 cup melted butter
- Blue cheese sauce and ranch sauce
Instructions for making chicken meatballs in a slow cooker
- In a large bowl, combine chicken, breadcrumbs, celery, 1/4 cup sauce, onion, egg, garlic, salt, and pepper. Stir to combine. Work the mixture with wet hands (I like to use gloves) into 1 1/2 inch balls. It turned out to be about 30. We put it in the fridge for 15-20 minutes to fry.
- Heat oil in a large skillet over medium-high heat. Add 1/2 meatballs; Fry for about 5 minutes until golden brown on all sides. Remove and place in a 4 liter container. Boil the rest of the meatballs and keep them in the pot. Top with 1/4 cup sauce. Cover and cook on low for 3 hours or until 165 degrees.
- In a small bowl, combine melted butter and remaining sauce. Pour over meatballs. Mix gently.
- Serve with celery and extra sauce.
