- 1 pound Double 8 Cattle Company Fullblood Wagyu ground beef
- 1 cup grated Parmesan
- 1/2 cup panko breadcrumbs
- 1 egg
- 1 teaspoon kosher salt
- 2 tablespoons hot sauce
- 1/2 sweet onion (chopped)
- 3 garlic cloves (chopped)
- 1/2 cup chopped parsley
- sauce
- 20 ounces chopped tomatoes
- 1/2 sweet onion (chopped)
- 2 tablespoons olive oil
- 1 large dill (chopped)
- 3 garlic cloves (chopped)
- 1/2 cup red wine
- 3 tablespoons tomato paste
- 1/2 CUP chopped fresh basil
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- Cheese
- 8 slices provolone cheese
- 4 ounces fresh mozzarella (cut into small pieces)

- 1 1/4 teaspoons instant yeast
- 1 3/4 cups bread flour

- 3/4 cup baking flour
- 1 cup semolina flour
- 2 teaspoons kosher salt
- 2 tablespoons olive oil
Steps to Make Wagyu Beef Dumplings in Hoagie Grits
- PREPARE THE SPONGE First prepare your sponge. In a medium bowl, mix bread flour and instant yeast until combined. Add hot water (80°F) until combined. Cover the biscuit with plastic wrap and leave at room temperature while you prepare the meatballs.
- PREPARING THE FITS In a medium bowl, thoroughly mix all the ingredients for the wagyu meatballs (beef, grated parmesan cheese, breadcrumbs, eggs, kosher salt, hot sauce, chopped sweet onion, chopped garlic and chopped parsley). Divide the beef mixture into 15 equal portions (1 1/2 oz each) and form each portion into a ball. Place the meatballs on a baking sheet lined with parchment paper and refrigerate the meatballs while you prepare the dough and sauce.
- PREPARING THE DOUGH In a medium bowl, combine the bread flour, grits, kosher salt, extra virgin olive oil, and the biscuit (collected earlier) until a crumbly dough forms. Using your hands or a dough hook, knead for 7 minutes or until smooth. Cover the dough with cling film and leave to rise for 1 hour. After the dough has risen for 1 hour, turn it out onto a lightly floured surface and divide into 5 equal portions.
- PREPARING THE HOAGIES Sprinkle the groats onto a baking sheet lined with parchment paper. Form a rectangle from the part of the dough. Bend to one side to form a 5" long stem. Pinch the seams. Lay the roll seam-side down on a baking sheet. Repeat this with the remaining pieces of dough. Drizzle the rolls with olive oil to coat them. Cover the rolls loosely with cling film and place in a warm place.
- Test for 1 hour. Preheat oven to 400°F and remove plastic wrap from loaves. Use a pastry brush to brush each roll under cold water. Then use a serrated knife to make 3 diagonal cuts in each roll. Bake the buns at 400°F for 20-23 minutes until golden brown. Let them cool completely. Then cut each roll roughly in half without cutting all the way through. This keeps the roller in one piece.
- PREPARE THE SAUCE Heat the olive oil in a small stainless steel saucepan over medium heat. Add chopped sweet onion and shallots. Fry the onion until transparent. Once the onion becomes translucent, add the minced garlic. Cook for 2 more minutes. Add red wine and deglaze the pan. Once the red wine has absorbed, add it to the tomato paste. Mix for 2 minutes.
- Then add tomato puree, kosher salt and black pepper. Cook over medium heat for 25 minutes, stirring occasionally. Add fresh chopped basil and season with kosher salt and freshly ground black pepper to taste. While the sauce is cooking, prepare the meatballs.
- FINAL STEPS Bake the meatballs at 400°F for 20-25 minutes or until golden brown. Refrigerate them for 10 minutes. Then add the meatballs to the sauce. Preheat oven to 425°F. Place the sliced rolls in a shallow saucepan. Place 3 cooked meatballs on each roll. Make sure you have plenty of meatball sauce.
